Cabaret des Oiseaux

Jude and Lucile Spaety of domaine Cabaret des Oiseaux have been producing exceptional, confidential natural wines in the Jura since 2017. With a background in agronomy, Jude was keen to work as naturally as possible. So they run their vines organically in the commune of Saint-Lothain and work methodically to obtain quality grapes. No chemical fertilizers, no systemic weedkillers, no insecticides, no fungicides. The estate favors manual work, with the vines ploughed and grassed according to the season. They use exceptional raw materials and favor natural winemakingmethods. The grapes are harvested by hand, fermented with indigenous yeasts and vinified without any inputs. At Cabaret des Oiseaux, if necessary to preserve the quality of the cuvée, a minimal dose of sulfur may be added. The result: carefully-crafted, authentic natural wines that honor their terroir. Le Cabaret des Oiseaux has made a name for itself among lovers of natural Jura wines.
