Le Mas des Chimères est installé à l’extrémité sud-ouest de l’appellation Terrasses du Larzac, plus précisément à Octon près du Lac du Salagou. Le Mas des Chimères est un domaine viticole familial fondé en 1993 par Guilhem Dardé. C’était historiquement une exploitation en polyculture, puis la famille Dardé s'est orientée vers la viticulture dans les années 1960. Guilhem rejoint le domaine en 1974, travaillant aux côtés de son père et de son oncle, avant de fonder sa propre cave en 1993. Son épouse Palma et leur fille Maguelonne ont rejoint l'exploitation en 1996 et 2008, respectivement. Le domaine cultive une grande diversité de cépages sur des terres rouges et des plateaux basaltiques, produisant des vins en agriculture biologique. Les cépages cultivés incluent le Carignan, Grenache noir, Cinsault, Syrah, Mourvèdre, Merlot, Cabernet, Muscat, Terret, Viognier, Chardonnay, Grenache Blanc, Carignan Blanc et Roussanne. Cette diversité permet de produire une gamme variée de vins rouges, blancs et rosés. Reconnu pour son respect de l'environnement, le domaine utilise des levures indigènes et limite les interventions en cave pour préserver l'expression du terroir. Les pratiques biologiques et la vinification naturelle sont des éléments clés de l'approche du Mas des Chimères, visant à produire des vins authentiques et expressifs. Le Mas des Chimères est apprécié pour ses vins qui reflètent la richesse des terroirs des Terrasses du Larzac. La combinaison des cépages variés et des sols uniques permet de créer des vins de caractère, appréciés tant localement que internationalement. Guilhem Dardé, avec l'aide de sa famille, continue de perpétuer la tradition viticole du domaine tout en innovant constamment pour améliorer la qualité et l'authenticité de ses vins.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
