Clément is the son of winegrowers, so he has always known vines and wine. After studying viticulture and oenology, as well as working at the Chapoutier houses and at Château Margaux, he decided in 2019, with the help of his sister Caroline, to take over the family estate. The entire family estate? Initially no, he will focus only on 1.5 hectares (out of a total of 23 hectares!) which he will rent while taking advantage of the family infrastructure. He then decides to ban all use of synthetic chemicals and to harvest at the last minute in order to guarantee optimal grape quality. During the vat room, he decides to work by gravity and to limit the use of So2 as much as possible. Clément wants straight, pure and unvarnished wines. After a very successful first vintage in 2019, he recovered a few hectares in the Saint-Bris and Côtes d'Auxerre appellations, but also in Courgis in the Chablis AOC, and he will thus become neighbors of Thomas Pico (Domaine Pattes Loup) as well as the De Moor estate. He then selects the most qualitative plots, but remains on a human-sized estate. We met Clément and Caroline during a day in the Chablis region in spring 2023. Their vision, the quality and integrity of the wines as well as the ambition of the project seduced us. Many plots in Chablis and elsewhere are in the pipeline, and we can't wait to introduce you to them. Today, Clément and Caroline are entering the big leagues, and we are very proud to be able to accompany them in this adventure.

Who are we ?

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.

We strive to offer you wines from artisan wines, from estates on a human scale and often family-owned. And that's why we take the time to travel across France from vineyard to vineyard in search of these natural wines that thrill us.
We are particularly keen to introduce you to the new winegrowers of tomorrow who work tirelessly to offer us magnificent wines.
We want to highlight them, and allow them to have greater, clearer visibility and wish to accompany them to you!
