Paolo Giordano, un vigneron renommé basé à Monforte d'Alba, dans la région du Piémont en Italie , gère un domaine viticole de 5 hectares situé dans le hameau de Perno. Cette zone est particulièrement propice à la culture du Nebbiolo, grâce à ses sols fertiles et à son climat favorable. Paolo Giordano adopte une viticulture durable et biologique, exigeant rigoureusement les produits chimiques. Il privilégie les méthodes naturelles pour la gestion des mauvaises herbes et des maladies, respectant ainsi l'environnement. En cave, Paolo Giordano utilise des levures indigènes pour la fermentation, garantissant une authenticité maximale de ses vins. Les macérations durent entre 20 et 40 jours suivants les vins, avec des remontages quotidiens pour assurer une extraction optimale des arômes et des tanins. Les vins sont ensuite élevés pendant 6 à 18 mois dans des fûts utilisés et des cuves en acier inoxydable, avant d'être affinés en bouteilles pendant un an. Aucune filtration ni collage n'est pratiquée, et l'ajout de soufre est strictement limité aux cas nécessaires, préservant ainsi la pureté et la qualité du vin. Paolo Giordano produit principalement deux types de vins : le Langhe Nebbiolo et le Barolo Perno . Le Langhe Nebbiolo est un vin rouge issu de vignobles plantés en 1990 et 2010. Il vieillit pendant 6 mois en cuve d'acier et en fûts de chêne usagés, puis bénéficie d'une maturation supplémentaire de 6 mois en bouteille . Le Barolo Perno est un vin rouge provenant de vignes plantées en 1986, subit une macération de 20 jours , est vieilli pendant 24 mois en fûts de chêne de 10 hectolitres, puis affiné pendant 12 mois en bouteille . Les vins de Paolo Giordano sont reconnus pour leur finesse, leur structure et leur capacité à refléter fidèlement la typicité du terroir de Monforte d'Alba. Son engagement envers des pratiques viticoles durables et ses méthodes traditionnellesde vinification font de ses cuvées des références respectées dans toute la région du Piémont. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
