Jules Métras, fils du célèbre vigneron Yvon Métras, a commencé sa carrière viticole en 2014 après avoir suivi une formation au lycée viticole de Beaune et acquis de l'expérience à l'étranger. À son retour dans le Beaujolais, Jules commence à travailler aux côtés de son père, gérant les vieilles vignes de Beaujolais-villages situés autour du chai familial à Vauxrenard. Au fil des ans, Jules a progressivement étendu son vignoble. Il a repris des parcelles de Beaujolais-villages ayant appartenu à Jules Chauvet , une figure emblématique de la viticulture naturelle, et a également ajouté des parcelles de Chiroubles, élargissant ainsi son domaine. La gestion du vignoble par Jules et Yvon est marquée par un profond respect de la nature. Ils travaillent les sols sans utiliser de produits chimiques, favorisant ainsi la biodiversité et la santé des vignes. Les vendanges sont réalisées tardivement et à la main , ce qui permet de récolter les raisins à parfaite maturité. En cave, Jules utilise des méthodes de vinification douces et précises, notamment la macération carbonique . Cette technique, qui consiste à fermenter les raisins entiers dans une atmosphère saturée en dioxyde de carbone, permet d'extraire les arômes fruités et de produire des vins d'une grande finesse. Jules n'utilise pas de sulfites, faisant entièrement confiance aux levures naturelles présentes sur les raisins secs pour la fermentation. Les vins de Jules Métras se distinguent par leur densité et leur minéralité. Ils respectent l' approche naturelle et respectueuse de la nouvelle génération de vignerons du Beaujolais . Cette philosophie de travail vise à produire des vins authentiques, qui expriment pleinement le terroir et les caractéristiques des cépages. Jules Métras incarne la tradition familiale tout en apportant une vision moderne et naturelle de la viticulture. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Allow €11 for delivery of up to 3 bottles. 13€ between 4 and 6 bottles. 16€ between 7 and 12 bottles. 24€ for more than 12 bottles. They will be offered to you from 300€ of purchase.

As soon as your order is prepared and sent to UPS, you will receive an email from our team with a tracking number, which will allow you to see where your bottles are, because, as we know here too, the feeling of thirst is quite unpleasant!

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
