Do we still need to introduce Jean-François Ganevat, affectionately nicknamed Fanfan? For decades, he has embodied the revival of the Jura vineyard, producing lively, authentic wines of unparalleled precision. Jean-François Ganevat is the 14th generation of a family of winegrowers established in Rotalier, in the south of Jura. After gaining valuable experience working alongside his father, he perfected his art as cellar master at Jean-Marc Morey in Chassagne-Montrachet, before taking over the reins of the family estate of 8.5 hectares in 1998. That year, the estate converted to organic farming, then to biodynamics in 2006. Each year, Jean-François Ganevat creates around forty vintages, with an emphasis on plot selections. The vines are pampered, with meticulous care, and receive natural preparations such as horsetail, dandelion, nettle and silica herbal teas. On the cellar side, Jean-François Ganevat produces natural wines, even if he does not claim this appellation. His wines are the result of spontaneous fermentation, with indigenous yeasts, without any addition of inputs that could alter the expression of the terroir. Thanks to limited yields and colossal work in the vines, the red wines, increasingly matured in terracotta jars, have now reached a remarkable level, rivaling in quality with the estate's white wines. The name Jean-François Ganevat has become synonymous with excellence in the world of Jura wine.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
