Le Domaine des fils de Charles Trosset, situé à Arbin en Savoie, est dirigé par Louis Trosset depuis 2013, après la retraite de son frère Joseph et la sécession de 2013. Ce domaine de 2,5 hectares se consacre exclusivement à la culture de la Mondeuse, cépage emblématique de la région. Autrefois géré en polyculture, le domaine a évolué pour se spécialiser dans cette variété de raisin. Les vignes, âgées de 25 à 50 ans, sont implantées sur des sols variés, incluant des caillasses, des marnes blanches du Kimméridgien et des terres rouges ferriques. Ces divers types de sols contribuent à la complexité et à la richesse des vins. Le domaine adopte une approche viticole en lutte raisonnée, ce qui implique une gestion respectueuse de l'environnement avec un travail manuel des sols et des vendanges manuelles, non égrappées. Les fermentations se font à partir de levures indigènes. Les cuvaisons durent entre 8 et 10 jours, suivies d'un élevage en cuve inox, parcelle par parcelle, afin de préserver la singularité de chaque terroir. Le domaine produit environ 20 000 bouteilles par an, réparties entre trois cuvées principales : "Harmonie", "Prestige des Arpents" et "Confidentiel". Ces vins sont reconnus pour leur profondeur, leur densité et leur élégance, et sont particulièrement adaptés à la garde. "Harmonie" est une cuvée qui exprime la finesse et l'équilibre du terroir d'Arbin, tandis que "Prestige des Arpents" se distingue par sa structure et sa complexité, idéale pour un vieillissement prolongé. "Confidentiel” est une production plus limitée, mettant en avant l'expression la plus pure et raffinée de la Mondeuse. Louis Trosset perpétue l'héritage familial en produisant des vins qui reflètent la pureté et la race du terroir d'Arbin. Sa gestion méticuleuse et son respect des traditions viticoles contribuent à la renommée et à la qualité constante des vins du domaine. Grâce à ses pratiques rigoureuses et à son engagement envers l'excellence, Louis Trosset continue de faire honneur à l'héritage viticole de sa famille tout en affirmant sa propre vision du vin de Savoie.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
