Olivier Pithon has a deep-rooted history in the world of wine since his childhood, having been introduced from a very early age thanks to his grandfather, a winemaker in Anjou. This passion intensified with the presence of his older brother, also a winemaker in the hills of Layon, who settled when he was only four years old. Happy memories marked his childhood, spent in his brother's cellar, fueling his love for wine. At the age of 14, he began working in his brother's vineyards, thus developing an early sensitivity for vines and wine. At 18, Olivier left his native region to continue his wine-growing training in the Bordeaux region, he would then explore other wine-growing regions such as Jurançon and Beaujolais. Once his training was completed, he worked for five years in the Saint-Émilion region, acquiring solid expertise in viticulture and winemaking. During his career, Olivier met important figures in the world of wine, including Stéphane Derenoncourt, a self-taught winemaker from Bordeaux, who introduced him to the importance of creating balanced and delicious wines. He also learned the importance of a love of a job well done, precision in choosing interventions, and respect for the raw material. His desire to fly solo and vinify his own vines finally came to fruition in 2001, when he found an ideal location in Calce, in the Pyrénées-Orientales. It was here that his dream of owning his vines, barrels and wine became a reality. His vines are located on an exceptional terroir, with marl, schist and limestone soils, and grape varieties such as Macabeu, Grenache Gris, Carignan, Grenache Noir and Mourvèdre. From the beginning, respect for the land and the vines was essential to him. He quickly embraced organic farming and, later, biodynamics, under the leadership of Jacques Mell, a biodynamic consultant. This approach is part of his desire to best express the potential of his terroirs and to obtain quality grapes. In addition to his commitment to organic and biodynamic viticulture, he strives to preserve the biodiversity of his environment. Animals are present on the estate, Laïs, the name of one of his vintages, is simply the cow that follows him continuously! Olivier maintains beehives, plants trees, sows plant cover in the vines. This global approach to agriculture is at the heart of his philosophy, contributing to the creation of sensitive, fair, and environmentally friendly wines.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

As soon as your order is prepared and sent to UPS, you will receive an email from our team with a tracking number, which will allow you to see where your bottles are, because, as we know here too, the feeling of thirst is quite unpleasant!

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
