Bichery Estate
Domaine de Bichery , located in the Côte des Bar , has been cultivating a few hectares using organic farming since 2014. Hannah and Raphaël Piconnet took over part of the family estate located in Neuville sur Seine . Raphaël's family has always been winegrowers, and organic farming became an obvious choice very early on. It is this love of the vine that guides their work and defines the vintages. One plot, one wine. This is how things are seen at Domaine Bichery .
Around 5000 bottles produced per year on the Pinot Noir , Pinot Meunier and Chardonnay grape varieties . The aging is done in barrels , without inputs . The fermentations are natural , with indigenous yeasts. The wines are not fined and not filtered. Hannah and Raphaël want to transcribe as best as possible the work in the vineyard, so the champagnes are all from a single harvest, and are not dosed.
