Only 0.5 hectares of a rare Syrah clone (named Serine), difficult to make more confidential. Coming from the brown coast, where the Serine is dark and exceptionally concentrated (due to this decomposed granite soil rich in iron). The wine shows varied fragrances: this much sought-after bacon-smoked is very present even in this fresh vintage, for the rest the pepper and black olive tapenade share the nose, the palate is more complex and lets us savor a "barbecue" finish mixed with smoke and ham fat.

Domaine Chamberyon-Manin is a family vineyard located in the heart of Savoie, where Marjorie Chamberyon and Jérôme Manin cultivate their passion for viticulture. Committed to a quality approach, they highlight indigenous grape varieties, such as Jacquère, Gringet and Pinot Noir, which testify to the authenticity of the Savoyard terroir. The estate extends over carefully selected plots, where organic and biodynamic viticulture is at the heart of their philosophy. Marjorie and Jérôme advocate respect for the environment by avoiding chemicals, thus promoting biodiversity and soil health. This sustainable approach allows the vines to flourish in a balanced ecosystem. In the cellar, the couple adopts artisanal methods, with particular attention paid to spontaneous fermentation and barrel aging. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
