Hervé Souhaut is a renowned winemaker in the world of natural wine. Based in Northern Ardèche, in Arlebosc to be precise, Béatrice and Hervé Souhaut created Domaine Romaneaux Destezet in 1993. Close to eminent winemakers such as René-Jean Dard and François Ribo, Thierry Alexandre, and Matthieu Barret, Hervé gained his experience by collaborating with them. Domaine Romaneaux-Destezet, created in 1993, is the fruit of Hervé's hard work. He gradually increased its surface area by planting new vines and buying up plots, some of which are home to vines that are 50 to 100 years old. Located opposite the Hermitage hill on the right bank of the Rhône, this terroir benefits from an ideal south-southeast exposure and the warm climate of the Doux delta, making it a privileged place for wine production. He currently cultivates 7 hectares of vines, which best express the granite terroir characteristic of the region, with an annual production of around 25,000 bottles thanks to the purchase of grapes. Hervé Souhaut is committed to an agroecological approach, although he refuses certifications, favoring his independence. His production philosophy seems simple on the surface, with manual harvests, low-intervention vinification, low-temperature macerations, and the absence of any oenological inputs. However, it is crucial to understand that making natural wine is not limited to putting grapes in a vat. Hervé's reputation is based on his meticulousness in each decision and his in-depth knowledge of the terroirs and vines, acquired over the years. Among his vintages, from La Souteronne to La Syrah, including the prestigious Clos des Cessieux, each is synonymous with great pleasure. The grape varieties used, typical of the Northern Rhone Valley, include Viognier and Roussanne for the white wines, and Syrah and Gamay for the red wines. The terroir is therefore mainly composed of Granit, offering a beautiful acidity. From the beginning, Hervé Souhaut has been committed to producing wines that are as natural as possible to express the potential of the terroir.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
